Lettuce wrap recipe- 1 lb ground turkey- begin to brown, 1/2 way through cooking, add 2 c chopped zucchini, 1 c chopped water chestnuts, 1/2 c chopped onion, 2 cloves minced garlic. Continue to cook until turkey is fully cooked. drain some of the liquid. Add salt, pepper, and optional grated orange peel, 1 tsp grated ginger. Mix well. Remove from heat and add 1/4 c. hoisin sauce. Mix well- until the mixture is fully coated and the sauce is warmed. Serve in lettuce leaves or over spinach (which then you can eat with a fork!)
